BrazilbGrape growing behavior of varieties Merlot and Cabernet Sauvignon.h[electronic resource] c2014 a(Resumos de Poster) aThe altitude regions of Santa Catarina State being recognized for the high quality showed in the wines produced, and the main reason is the peculiar climate conditions found only in these regions of Brazil. In addition, the appropriate phonologic ripeness is a very important characteristic for obtain a good quality of wine produced. Therefore, the study and characterization of the new terroirs that shows potential to the wine grape production, become crucial. For this it?s necessary the characterization of the local weather, the phenology, the physic-chemistry quality and phenolic of the grapes and wines produced. The objective of this study was characterize the mais weather changes and the enological behavior of Merlot and Cabernet Sauvignon in two regions, Campo Belo do Sul (950 m) and S??o Joaquim (1400 m) during cycle 2013/2014. The phonological stages evaluated were bud break, full bloom, veraison and maturity. At harvest the levels of total soluble solids, pH, acidity, total polyphenols and total anthocyanins were measured. Climatic dat measured were temperature, rainfall, global radiation and thermal amplitude. The varieties presented early bud break and maturity in the region of lower altitude. At harvest Merlot grown in Campo Belo do Sul presented 20.5??Brix, 84 meq/L and pH 3.3. In S??o Joaquim it was observed 19.5??Brix, 128 meq/L and pH 3.1. At harvest Cabernet Sauvignon grown in Campo Belo do Sul presented 19.6??Brix, 87 meq/L and pH 3.3. In S??o Joaquim it was observed 21??Brix, 113 meq/L and pH 2.9. Both regions presented favorable weather conditions to both varieties.
