S??o Joaquim is located in the highland of the State of Santa Catarina. This region is nationally known as the coldest of Brazil. In order to evaluate the potential of this region for high qualitative wine production, a collection of grapevine varieties (Vitis vinifera) was implanted in 1991 at the Experimental Station of Epagri in S??o Joaquim. From the collection tested, Cabernet Sauvignon emerged as one of the best adapted variety, especially due the late budding. The aim of the present investigation was to characterize the climatic conditions, phenological development and qualitative attributes of Cabernet Sauvignon from a vineyard located in S??o Joaquim (latitude: 28??15?13??S; longitude: 49??57?02??W; altitude: 1300m), during 2006/2007 and 2007/2008. The climatic parameters were obtained from a meteorological station installed at the vineyard. Especial atention was laid in the maturation period (begin of veraison until harvest), for which the maximal and minimal mean temperature, mean temperature, precipitation, humidity, total insolation and photoperiod were determined. Physico-chemical analyses were performed at harvest. But breaking, begin of floration, begin of veraison and harvest occurred in 18/09, 21/11, 02/02 and 28/04 in 2007/2008, respectively. Due the altitude, the mean temperature of S??o Joaquim region is lower than other wine regions of Brazil, resulting in a significantly longer vegetative period (mean of 2006/07 and 2007/2008 = 218 days). With a longer vegetative cycle, the maturation ocurred in a more suitable environmental condition. The daily maximal and minimal mean temperature during the maturation period was 13.76oC and 22.41oC in 2006/2007 and 11.26oC and 20.39oC in 2007/2008, respectively. The extended maturation period favoured a greater insolation (mean total insolation = 512.9 h) and a higher accumulation of sugars (mean oBrix at harvest = 21.6).
